The skeptic's confusion:

Humans were created after the other animals.

"And God made the beast of the earth after his kind, and the cattle after their kind ... And God said, Let us make man ... So God created man in his own image." Genesis 1:25-27

Humans were created before the other animals.

"And the Lord God said it is not good that man should be alone; I will make a help-meet for him. And out of the ground the Lord God formed every beast of the field, and every fowl of the air, and brought them to Adam to see what he would call them." Genesis 2:18-19

Explanation:

The animals were created before Man was. It is crucial to take a close look at Genesis 2:18-19. Before the earth was created, God had it in mind-- a forethought-- that Adam would need a companion. That is the perspective that the narrative takes in that section. After the forethought, God created the animals, then He created Man. At that point, God brought the animals to Adam, already knowing that He would create Eve next. Part of the purpose of the introduction of the animals was for Adam to familiarize himself with the different species. Summarily, the Genesis 2 account does not give a chronological order of events, per se, but rather gives more detail of individual events then what is offered in Genesis 1. By divine inspiration were the two separate accounts created.

"And Jacob called unto his sons, and said, Gather yourselves together, that I may tell you that which shall befall you in the last days... Dan shall judge his people, as one of the tribes of Israel. Dan shall be a serpent by the way, an adder in the path, that biteth the horse heels, so that his rider shall fall backward. I have waited for thy salvation, O LORD." Genesis 49: 1, 16-18
