The skeptic's confusion:

All are unclean and may not be eaten.

“And every creeping thing that flieth is unclean unto you: they shall not be eaten.” Deuteronomy 14:19

Some may be eaten.

“Yet these may ye eat of every flying creeping thing that goeth upon all four, which have legs above their feet, to leap withal upon the earth; Even these of them ye may eat; the locust after his kind, and the bald locust after his kind, and the beetle after his kind, and the grasshopper after his kind. But all other flying creeping things, which have four feet, shall be an abomination unto you.” Leviticus 11:21-23

Explanation:

God through Moses simply made a change in the Israelites diet, just as He did with the Apostle Peter thousands of years later. In Peter’s case, he discovered that all men may, as of that time, eat all flesh. Likely, the alteration in the Pentateuch had to do with the new environment that the Israelites would be in in Canaan.

"And Jacob called unto his sons, and said, Gather yourselves together, that I may tell you that which shall befall you in the last days... Dan shall judge his people, as one of the tribes of Israel. Dan shall be a serpent by the way, an adder in the path, that biteth the horse heels, so that his rider shall fall backward. I have waited for thy salvation, O LORD." Genesis 49: 1, 16-18
